Hey! This is the very first homemade recipe that I posted on my humble site and to be completely honest with you, I really have nothing interesting to say about this berry compote recipe. I wish I had some great story about how I was wandering around a forest and I stumbled upon some wild berry bushes and I decided to gather a bunch as my ancestors did, but… I did not. I stumbled into Trader Joe’s, walked over to the frozen fruit section and put two bags in my cart. But give me a break here… I live in New York City and it’s a freezing day in the middle of January! The only wild berries to pick around here are my two mutts’ dingleberries! Oops… That was a pretty gross joke. Sorry about that!
Annnyyway… So without further ado, the recipe for this delicious berry compote, everyone.
- 4 cups frozen mixed berries of your choice (I used strawberries, blueberries, raspberries and blackberries)
- 3/4 cup organic sugar
- 1/3 cup water
- 1 1/2 tbsp corn starch
- put the frozen berries, sugar and water into a small pot and bring to a boil, stirring occasionally until berries are soft and tender
- add the cornstarch and mix well together to thicken the compote
- move to a bowl and enjoy while it’s warm!
