Super Easy Pumpkin Bread

This is the most moist (why do people hate this word so much?) pumpkin bread ever and it’s so easy to make.  Enjoy~!
  • 1/3 cup granulated white sugar
  • 1/3 cup dark brown sugar
  • 1 cup + 1½ Tbsp all-purpose flour
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • ½ teaspoon salt
  • ½ tsp cinnamon
  • ½ tsp pumpkin spice
  • 1 large egg (or 2 small ones)
  • ¾ cup pumpkin puree
  • 5 tbsp melted butter
  • ⅓ cup water
  1. In a large bowl, combine the white and brown sugars, flour, baking soda, baking powder, salt cinnamon and pumpkin spice
  2. In another bowl, combine egg, pumpkin puree, butter and water.
  3. Combine wet ingredients and dry ingredients.  Mix well.
  4. Grease one 9×4 loaf pan (I use coconut oil) and pour the batter into it.
  5. Bake at 350 F (175 C) for 45 minutes, or until a toothpick inserted in the middle comes out clean. Let cool for about 5 minutes then remove the break from the pan, wrap in aluminum foil and allow to cool completely before serving.
